“I’ll sleep when I’m dead” might be one of the more damaging sayings in our contemporary productivity lexicon. Indeed, we know that sleep deprivation reduces productivity. In fact, you could even argue that because being well-rested makes you more productive and efficient, sleep doesn’t take time, it makes time.

And the regulars. My favorite older couple and their excellent taste in tequila. The middle-aged man who always sat front row center and had a very specific hamburger order. The sad-seeming man with hearing aids, always alone, who only ever ordered a slice of chocolate cake. Sometimes he would smile at me. The artist who would annoy everyone in my section by spreading out his papers and loudly sketching during the show, turning out beautiful renderings of every great artist by the show’s end. The couple who ordered the most expensive bottle of wine on the menu and a three course meal every single time they came in. The grouchy man who, over time, got less grouchy with me, even when there was too much pepper in his food (always). The woman who always ordered a single vodka and deviled eggs. The rambunctious man who went through cycles of only ordering green tea, then cycles of only ordering expensive martinis. Waiting on Danny Meyer — always stressful, though he’s always very nice. For three years of my life, every Monday night, I waited on Sue Mingus, the widow of the late, brilliant Charles Mingus, and her daughter, an eccentric massage therapist who sometimes brought us fresh eggs from her farm. One Christmas, Sue handed me a tiny envelope with a tip in it and a note attached that she’d accidentally left in — girl with top knot. (I did always wear my hair coiled in a thick knot on top of my head.) I was sad, thinking that after all this time, she didn’t even know my name. But after all, I was just a waitress, serving chicken wings — maybe I wasn’t as important to these people as they were to me. Later, after I’d graduated from Monday nights to weekends only, we learned that she was slipping into dementia. I still have that note on my desk.

As with any place, there are too many magic people to name that made the building more than a concrete structure, that breathed life into it. Ivory, the maitre’d who could turn your bad day into the best, most fun day of your entire life. Everyone who passed through the front door and met Ivory immediately fell in love with him, including my mother. Nikki, the best busser we ever had, who could clear an entire section in one trip somehow with only two arms, always with a radiant smile on her face. Piotr, the long-time Jazz server and lovable Polish misanthrope. One time Piotr didn’t come into work for a few days, and when he came back, he told us he’d had another baby. “What! Piotr, we didn’t know your wife was pregnant!” we said. He shrugged. “You never asked.” Fair enough! Katherine, who with the patience of an anointed saint, worked Monday night for years, which meant doling out drinks to the entire Mingus Big Band (if you give a big band only two drink tickets…). Our manager, Grant, after whom we fondly coined the term “grantic,” describing the panicked way he sometimes reorganized all the tables in the club. Our porters, José and Patrick, who complained about each other nonstop and yet single-handedly kept the club afloat.

I just found that as women and men age, they get more tainted by their experiences. They create within themselves a negative bias as a standard operating procedure. I went on many dates with women in their 40s, and what I found consistent between all of them was they were immediately looking to find out how I was going to hurt them, even from date one.

The hard parts of our existence are not an aberration or interruption to life — they are life. This push to make lemonade out of every single lemon we’re handed puts an unreasonable expectation on us as humans. It perpetuates a narrative that says suffering is all in your head, or at least in your control.

First you have to know when and how you sleep. Time logs show that people don’t just sleep in their beds from lights out to the alarm blaring. They crash on the couch while watching TV, or hit snooze (neither of which produces good sleep). They might sleep 6.8 hours some night during the workweek, which then becomes “typical” in a mental model, but average 8.84 hours per day when weekends, holidays, naps, and unintentional sleep get factored in. Knowing your general weekly sleep total means you can then divide this by seven and aim to get somewhere near this number in higher-quality sleep each day. Going to bed at a set time and waking up at a set time will feel more restful than cycling through weekday exhaustion and weekend crashing.

There’s much to be said about why time estimates don’t match time use surveys. For one thing, we are living in exhausting times. Even before the pandemic, people were struggling with fatigue, often thanks to over-scheduled lives, poor diet, lack of exercise, and other culprits. These days, an overactive news cycle, our dramatically restructured lives, and the ongoing stress of living through uncertain times can all contribute to a bone-deep sense of exhaustion. We tell ourselves to breathe and drink water and sleep, and then we do those things — so why isn’t that enough, even when we get a full night’s sleep?

My schedule just prohibited it. When I dated conventionally, it always followed the same pattern: Meet a girl, get to know them, they like the vibe. Then I start my crazy travel schedule and there’s an awful lot of stress and texting. When are you coming back? Where are you?
